Ingredients
- 1 dry pint Pure Flavor® Juno® Bites Red Grape Tomatoes, halved
- 1 lb Pure Flavor® Mini Cucumbers, chopped
- ½ cup red onion, diced
- ¼ cup roasted salted peanuts
- ¼ cup dill, finely chopped
- ¼ cup cilantro, finely chopped
- ¼ cup shredded coconut
- ¼ cup scallion, diced
- 1 tbsp lemon juice
- Salt & pepper, to taste
- Fresh mint, for garnish
Directions
Step 1
Add all the veggies to a large salad bowl. Season with salt and pepper. Drizzle the lemon juice over and toss to combine. Add peanuts and coconut. Garnish with mint to serve.Recipe created by Varsha Rathi
