Ingredients

  • 12 oz Pure Flavor® Sweet Blooms® Strawberries
  • 1 dry pint Pure Flavor® Cloud 9® Bite-Sized Fruity Tomatoes
  • 1 Pure Flavor® Long English Cucumber
  • 1 lemon, juiced
  • 2 cups quinoa, cooked
  • 1 cup parsley, chopped
  • ½ cup mint, chopped
  • ½ cup feta cheese, crumbled
  • 1/3 cup olive oil
  • Salt & pepper to taste

Directions

Step 1

Chop strawberries, cucumber, and tomatoes into small pieces.

Step 2

In a large mixing bowl, add quinoa and vegetable mixture.

Step 3

In a small bowl, combine oil, lemon juice, and salt & pepper to taste and whisk.

Step 4

Add dressing to salad and mix well to combine.

Step 5

Top with parsley, mint, and feta. Enjoy!
