Ingredients

  • 1 dry pint Pure Flavor® Juno® Bites Red Grape Tomatoes, halved
  • 1 Pure Flavor® Long English Cucumber, diced
  • 3 cups cooked quinoa
  • ½ cup baby carrots, diced
  • ½ cup pomegranate arils
  • 1 bunch fresh cilantro, chopped
  • Fresh lemon juice, to taste

Directions

Step 1

In a salad bowl, mix tomatoes, cucumber, quinoa, pomegranate arils and carrots together. Sprinkle with fresh cilantro and lemon juice. Serve immediately.
