As a recipe creator, she has hacked the healthy meal and created a flavorful, nutritious dinner complete with time saving tips.
Hello everyone! It’s Megan from @mamaofwholelittles back with another amazing recipe. In this season of life where my oldest child is starting Kindergarten and having a newborn at home, I am so thankful for quick and easy recipes like the one that I have created here. You won’t see me following multi-step directions, buying crazy amounts of random ingredients, or spending hours in the kitchen… because I simply cannot do it. However, I want to show you all that you can eat healthy without doing the things listed above. Healthy eating gets a bad rap, right? It is often thought of as extremely time consuming, both in planning and preparation. I am passionate about providing my family healthy foods, but I am in the trenches of this busy season of life with you and I am here to show you that you can do it too! This recipe comes together in the same amount of time that it would take you to order fast food, so I consider it 100% worth it!
When I create new recipes, of course I always start with the flavor profile of the Pure Flavor® product. The Cloud 9® Bite-Sized Fruity Tomatoes are their sweetest tomato, which to me can go with a spicy dish, (can you imagine getting a pop of sweet in a buffalo chicken flavored dish? YUM!) or be complemented by more of a sweet and savory combination – that’s what I went for this time!
Then, I think of ingredients that are considered “safe foods” for each of my family members to see if I can make a dish that will get all of them to at least try it. The chicken apple sausage in this recipe is a favorite of everyone in my family, a couple of them like apples, a couple of them like potatoes, and they all enjoy okra from time to time! I wanted to complement the sweet Cloud 9® tomatoes with a sweet apple sausage, and then add some tart apples for another huge pop of flavor!
Another huge goal of mine in recipe development is to make it easy to prepare. To all the overwhelmed mamas out there, you don’t have to serve snack foods for dinner… I promise there are easy recipes out there that you can serve and still get your family eating healthy dinners. I am here to help!
To make this recipe even easier the chicken apple sausage, potatoes, and apples can all be chopped beforehand and refrigerated in separate containers. Then when it’s time to make it, you just simply pull them out and toss on a baking sheet with the okra and tomatoes. Also, you are welcome to use fresh okra without altering any cooking times – but frozen okra is just such an easy option, and the taste is comparable.
This is also the time of year that busy mamas start thinking about how they can eat better themselves and provide healthy meals for their families, but still navigate busy schedules of work, school, extracurricular activities, babies, and toddlers! Self-care is important. Your car won’t run properly if it doesn’t have the right kind of gas in the tank, and neither will your body!
So, grab your baking sheet, preheat that oven, and let’s get chopping to make a super easy, healthy meal for your family! This simple and delicious dinner will make everyone at the table happy while also helping you stick to your healthy living goals!
