I wanted to make a super easy, healthy, and balanced brunch recipe that is 100% foolproof. One of my favorite foods, and a staple in my house, is puff pastry. I have been seeing lox bagels everywhere on social media lately and I wanted to make my own spin on this brunch trend with, you guessed it, puff pastry and my kids’ favorite greenhouse grown vegetable Uno Bites™ Nano Cucumbers! This Cucumber & Salmon Puff Pastry recipe combines both ingredients that are household favorites, so it’s a win-win. Plus, I love trying new weekend recipes that my kids can not only help with but also enjoy for themselves too! You may be wondering how this will all come together so I’m here to outline the simple steps to create this at home. Trust me when I say you have to try this for yourself to see how well it all works together!
START WITH PUFF PASTRY –
Puff pastry is truly a beautiful product! From the art of making it, to the endless ways to customize and make it your own, it’s easy to see why I always have it on hand. Puff pastry has come a long way in the last couple of years as far as store-bought options go. There are many vegan options, as well as gluten-free versions, which is amazing for anyone who has any food allergies or intolerances in your family. I also love this option instead of a bagel because they are lighter and won’t leave you wanting to head back to bed!
My kids love helping me in the kitchen and this is one of those recipes where you can set out all of the ingredients & allow the kids to do most of the work without a huge mess or loads of prep work. It’s so fun to include them in cooking on the weekend because it allows us to spend some extra quality time together. Simple tasks are key like, having them help mix the topping or brushing the puff pastry with egg to get it ready. They can help top the pastries with garnishes when they are ready to serve, adding as many sliced Uno™ Bites Nano Cucumbers as they want! (Sidenote: I always catch them snacking on these when we use them in dishes.)
HOW TO MAKE THEM –
To create this recipe you will need some pretty basic ingredients!
- 1 dry pint Pure Flavor® Uno Bites™ Nano Cucumbers, thinly sliced & divided
- 2 sprigs of fresh dill, divided
- 1 sheet puff pastry
- 1 egg
- 8 oz smoked salmon
- ⅓ cup dairy-free garlic & herb Boursin® cheese
- ⅓ cup dairy-free cream cheese
- 2 tbsp raw honey
- 3 tsp lemon juice
This recipe calls for dairy-free cheeses because that best suits my family, but you can customize it any way you like. You can easily find dairy-free Boursin® cheese at most major grocery stores. I like to use a recipe as a guide but mainly for inspiration, so If you are missing a few ingredients or want to substitute based on your flavor preferences, feel free to improvise and watch the magic happen!
All you need to do is thinly slice your cucumbers (I used a cheese slicer to get them extra thin) so that no little hands are going near sharp objects. Gently roll out your puff pastry of choice and cut it into 9 rectangles. Poke each square with a fork, brush with egg wash, and bake them for 12 minutes while you make the topping. Mix together the cheeses, lemon juice, dill, and honey. Then, add in your sliced cucumbers and mix until just combined. My kids love cucumbers so we always use extra! Top each pastry off with some smoked salmon, fresh dill, and more cucumbers!
